What to Do if Something Goes Wrong

Sometimes even the simplest of things can go wrong. Fortunately, if something goes wrong with your truffle kit, all is not lost. See below for some suggestions on what to do if...


1. Too much cream is added to the truffle filling. Too much cream will cause the truffle filling to stay soft, even after it's chilled. You won't be able to form it into balls for truffles, but why not treat it as a terrific gourmet chocolate sauce? Serve it over ice cream or with a slice of cake—you could even serve it slightly warmed as a dip for marshmallows, graham crackers or fresh fruit—think chocolate fondue. 2. Not enough cream is added to the truffle filling—and it’s hard as a rock! Gently re-heat the truffle filling in the microwave or double boiler and add the missing cream. Re-chill and you’re back on track.


3. The truffle filling got too hot and the chocolate is burned. Rush to order another kit—we’re sorry, but there’s just not much else we can do about this one.


4. The final coating on the truffles is still cracking. If it’s very cold outside—and cool in your kitchen—it can take longer for the truffle filling to come to room temperature between the second and third coating. Just let them rest another twenty minutes and add a light fourth coat—this will cover the cracks and the truffles will be as elegant as ever.
